<P>PROBLEM TO BE SOLVED: To provide a method for producing Tsukudani (food boild down in soy sauce) of Namacystus decipiens without losing nutrients, taste and palate feeling. <P>SOLUTION: The method for producing Tsukudani of Nemacystus decipiens comprises soaking Nemacystus decipiens in seasoning liquid having a certain degree of the brix of sugar content at a fixed temperature so as to make the seasoning liquid gradually penetrate into the Namacystus decipiens through utilizing osmotic pressure. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
