<P>PROBLEM TO BE SOLVED: To provide a method for producing eel processed goods suppressed in nasty odor and oxidation, having soft palate feeling and excellent in flavor. <P>SOLUTION: This method for producing the eel processed goods comprises treating an eel grilled without seasoning with sweet sake and steaming the eel followed by splitting and broiling. The eel processed goods obtained by the method are also provided. It is preferable to perform treatment with sweet sake through treating for ≥5 s with sweet sake of 10% (v/w) based on the weight of an eel. The eel processed goods as processed goods include not only eel split and broiled but also eel further seasoned or eel obtained by freeze-treating the seasoned eel.
