FIELD: food-processing industry, in particular, production of semi-finished product in the form of garnish potatoes. ^ SUBSTANCE: method involves washing and inspecting potatoes; before cleaning procedure, treating potatoes with preparation produced from Mortierella humilis micromycet biomass by predetermined process, and holding for about 5 hours; providing additional cleaning, cutting and frying of potatoes; packaging fried potatoes in bags under vacuum; pressurizing and pasteurizing bags containing potatoes. ^ EFFECT: improved organoleptical properties of semi-finished product in the form of garnish potatoes. |
