<p>In a process to fill sausage skins with sausage meat, the meat is discharged into the skin (3) through a tube (3) positioned under a sensor that detects a burst sausage. At intervals the optical sensor takes pictures that are monitored by an image system that issues an alarm when it detects a burst sausage skin or unfilled section of skin. The sensor (7, 9) is camera or a movement sensor. The signal evaluation unit (9) issues a warning signal if the skin no longer moves in the direction of sausage meat extrusion, or if the extrusion does not take place within a given time. The sensor incorporates light-sensitive cells that detect reflected light.</p> |
