<p>Protein-rich imitation cheese comprises 1 - 25% by wt. cheese, 5-35% by wt. sugar and/or sugar equivalents, 5-30% by pregelled starch, 10-50% by wt. protein-rich binding agent, pref. soya flour, and enough water to give a final moisture content of 20-40% by wt. The product which is cheaper than natural cheeses is a nourishing food for humans and domestic animals. The product is stable to storage at ambient temp. for up to 6 months while retaining practically all of its aroma and cheese taste. The m.pt. is higher than that of natural cheese.</p> |
