<P>PROBLEM TO BE SOLVED: To provide a meat product having crisp and clean palate feeling without adhering to the teeth, having no trace of wire mesh or the like on its appearance, maintaining a desired shape, and coated with curdlan gel coating film: and to provide a method for producing the meat product or the like coated with the curdlan gel coating film, by which, in using a double nozzle for production, curdlan alkaline water solution slightly falls down from the tip end of the nozzle and the trace of the wire mesh are hardly left even when heated on the wire mesh. <P>SOLUTION: The meat or the meat product contains dietary fibers, is coated with the curdlan gel coating film, and is obtained through applying dietary fiber-containing curdlan alkaline water solution on meat or a meat product followed by neutralizing the meat or the meat product with acid to form the curdlan gel coating film thereon. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
