The rings (1) have a thickness of 2 and 4 mm for blue and white colour and internal diameter of 26.3, 30 or 33 cm. The method comprises laminating a block of dough having a volume slightly higher than the flan, using a rolling pin (3) in a direction parallel to the plane and smooth surface (2), and removing the excess dough when the pin is rolled on the upper surface of the ring. In the method dimensioning the flan is by compression of the dough with a roller pin and removing the ring, which surrounds the flan. The ring is of square, rectangular, polygonal or oval in shape.
