The process involves generating a sinusoidal voltage difference between two electrodes (24) between which a product is arranged. The product is modeled by a parallel resistor-capacitor type electric circuit. Electrical quantities of the electric circuit are measured, and characteristics to control the product are determined according to the measured electrical quantities. The electrical qualities are equivalent resistance, equivalent capacitance, induced current, phase difference, total impedance and imaginary part of the impedance. The characteristics to be controlled are sugar rate in juice, water content, acidity, salt rate, texture rate and alcoholic rate in sweet wart of grapes. An independent claim is also included for a device for controlling the quality of the food product.
