PROBLEM TO BE SOLVED: To provide a noodle-making machine designed to easily prevent the extrusion pressure on noodle dough F from getting overloaded. SOLUTION: The noodle-making machine includes an extrusion cylinder 1 to be filled with noodle dough F, a die 22 attached onto the bottom of the extrusion cylinder 1 and functioning to pass the noodle dough F therethrough in the form of ribbons, and a piston 333 engaged on the extrusion cylinder 1 and functioning to pressurize the noodle dough F against the die 22. This machine is also equipped with a mechanical pressure-regulating mechanism 4 functioning to evacuate the extrusion cylinder 1 and the die 22 toward the extruding direction of the piston 333 when the extruding pressure of the piston 333 against the noodle dough F exceeds a given level.
