<P>PROBLEM TO BE SOLVED: To obtain crude ham paste enabling tasting flavor and palate feeling peculiar to crude ham without performing heat treatment, and to provide a method for producing the crude ham paste. <P>SOLUTION: The crude ham paste is obtained by mincing block-like crude ham with an auto mincer attached with a mince plate with a mince mesh of 3-30 mm minimum, or mincing slice-like crude ham of a thickness of 0.5-5 mm with an auto mincer attached with a mince plate with a mince mesh of ≤50 mm minimum, and mixing 10-80 pts.wt. of vegetable oil with 100 pts.wt. of each crude ham after mincing. The crude ham paste maintaining palate feeling, taste and chewability peculiar to crude ham is obtained by adding a proper quantity of vegetable oil, preferably mixed oil obtained by mixing each equal quantity of olive oil and garlic oil to crude ham minced to a moderate size. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
