A beta-glucan containing processed cereal grain product, its use in food and pharmaceutical products and a method of preparation thereof is disclosed, wherein the beta-glucan containing processed cereal grain product when mixed with water at a temperature between 0 to 55 Deg C releases at least 60% of the beta-glucan into the water, wherein the releases beta-glucan has an average molecular weight greater than 100,000 Daltons and/or a specific viscosity greater than 2.0 centistokes at beta-glucan concentrations of approximately 0.5% by weight, wherein the cereal grains are chosen from oats, rye and barley, and wherein the product has a moisture content which is sufficiently low to stop growth of microbiological organisms. A method of producing the beta-glucan containing processed cereal grain product is also disclosed.
