<p>A full-bodied taste enhancer capable of realizing strong exhibition of full-bodied taste, namely, full-bodied taste enhancer of high strength having a low content of fat or oil composition. The full-bodied taste enhancer has such a low content of fat or oil composition that a calorie reduction can be attained, is effective with addition of a small amount thereof and is applicable to food originally containing scarcely any fat or oil, such as light soup or miso soup. In particular, there are provided a full-bodied taste enhancer comprising a product of decomposition of long-chain highly unsaturated fatty acid and/or ester thereof; a full-bodied taste enhancer comprising an extract from product of decomposition of long-chain highly unsaturated fatty acid and/or ester thereof; and a food comprising such a full-bodied taste enhancer.</p> |
