The procedure, comprising at least one vacuum evaporation stage (E1) to produce a viscous fluid from the initial liquid, and at least one drying stage (E2, E3) to create a solid from the viscous fluid, has the drying stage made up of at least one thermomechanical treatment stage (E2) in which a thermomechanical machine is injected simultaneously with the viscous fluid and a given proportion of a powdered product from the same family as the initial liquid. The machine is designed to mix the two together and make pellets of the product that solidify in contact with the ambient air. Following the drying stage the solid product is formed into a powder, part of which is recycled into the thermo-mechanical machine in a preferable ratio to the viscous fluid of between 0.70 and 1.30 : 1. The initial liquid has a dry matter concentration of between 7 and 20 per cent, which rises to a preferable concentration of 80 - 85 per cent in the pellets.
