<P>PROBLEM TO BE SOLVED: To provide a food additive capable of inhibiting interaction between a thickening stabilizer, such as pectin and an alginate salt, and a mineral, such as calcium, and to provide a food given by adding the additive thereto. <P>SOLUTION: This food viscosity modifier comprises a sugar phosphate ester or its salt.
