EMULSION CONTAINING UNSATURATED FATTY ACID AND ITS ESTER

PROBLEM TO BE SOLVED: To provide an emulsion with which conjugated linoleic acid (CLA) and its derivative can be easily and inexpensively formulated in beverages and dairy products, and the CLA and the CLA derivatives are supplied through physicochemically safe treatment.

SOLUTION: This emulsion comprises the following: (a) 0.1-50 wt.% of conjugated linoleic acid or a conjugated linoleic acid derivative; (b)0.1-30 wt.% of a plant lecithin mixture; (c) 0-20 wt.% of a coemulsifying agent; (d) 0-70 wt.% of a polyol; (e) 0-70 wt.% of a carbohydrate; (f) 0-1 wt.% of an antioxidant; and (g) 20-99 wt.% of water phase. The emulsion contains no oil and fat except for a triglyceride of the components (c), which may optionally exist, and the components (a) and (b).
