The carcass splitter, especially for pigs, has a system for delivering the carcasses, suspended by their hind legs, to a working post (1) with a cutter (7), incorporates a retractable system (3) for guiding and positioning the legs of a suspended carcass relative to the working post. The working post is fed continuously with carcasses one after another and cuts them on the move, and the retractable system, actuated by a hydraulic or pneumatic cylinder or electric motor, is able to follow the position of each carcass as it passes through.
