Fermenter (20) has a spray system (24) which sprays a dispersion containing biological material into it. The system produces rotary flow in the ferment (21). Independent claims are included for: (A) a fermentation method in which a ferment is broken down using microorganisms and the ferment is sprayed in so as to produce rotary flow; and (B) spray systems with jets whose flow crosses at least two fixed axes on the spray head which are at right angles to each other.
