NEW AMINOACYLASE AND METHOD FOR PRODUCING THE SAME, AND METHOD FOR PRODUCING AMINO ACID DERIVATIVE BY UTILIZING THE NEW AMINOACYLASE

PROBLEM TO BE SOLVED: To provide an enzyme for hydrolyzing and synthesizing a stable amino acid derivative in easy mass production and high yield and to provide a method for producing the amino acid derivative using the enzyme.

SOLUTION: The amino acid derivative-decomposing synthetase has the following physicochemical properties (1) to (3). (1) Action and substrate specificity: catalyzing hydrolysis and synthetic reaction of the amino acid derivative; (2) a range of optimum reaction temperature: nearly 60°C; (3) a range of optimum pH: 5.0-8.0. The method for producing the amino acid derivative-decomposing synthetase comprises culturing a microorganism having ability to produce the amino acid derivative-decomposing synthetase and collecting the amino acid derivative-decomposing synthetase from the culture solution.
