USE OF CROSS-LINKED OR INHIBITED STARCH PRODUCT

PROBLEM TO BE SOLVED: To provide starch controlling and/or regulating the blood glucose level after a meal and to provide a food using the starch.

SOLUTION: The cross-linked starch has 0.10-0.35% content of an added phosphate and releases <25% glucose at 20 min, 30-70% glucose at 120 min and >60% glucose at 240 min. When the chemically modified starch is properly formulated in the food, the glucose is provided to a person ingesting the chemically modified starch or food over a long period. Thereby, the starch can be used for providing a more constant glucose level.
