PROBLEM TO BE SOLVED: To provide a food component extracting liquid properly used when a protein as an allergen is measured in a food. SOLUTION: The food component extracting liquid is an extracting liquid containing a reducing agent and a solubilizing agent. The extracting liquid can solubilize and extract the strongly heated, derived and insoluble protein in addition to the non-derived protein in the food. A risk of passing over the protein such as the allergen in the processed food is significantly reduced, and a particular effect for preventing an allergy to the food is achieved.
