Rapid detection of yeasts in foodstuffs comprising PCR based amplification using a pair of oligonucleotides of ADNr 185 hybridization, where extraction of the DNA after enrichment of the samples, permits detection of 10 cells of yeast per gram in less than 48 hours, is new.
