PURPOSE:To obtain starch processed with oil and fat and stable to oxidation even in the state of high oil and fat content, by charging raw flour rich in starchy substance together with a proper amount of water and oil and fat to a twin-screw extruder and extruding the mixture through a die. CONSTITUTION:Raw flour rich in starchy substance (e.g. starch of grain such as nonglutinous rice, corn, etc., starch of beans such as adzuki bean, green peas, etc.) is charged together with a proper amount of water and oil and fat (e.g. corn oil, fish oil, etc.) to a twin-screw extruder. Although the starch is gelatinized with heat, there is no change in the oxidation stability of the oil and fat. The oil and fat can be adsorbed to the starch at a ratio of as high as about 40 wt% based on the total weight of the starch and the oil and fat. |
