<P>PROBLEM TO BE SOLVED: To provide an antioxidant composition derived from a fermented leguminous plant and having increased antioxidation property. <P>SOLUTION: The antioxidant composition is produced from a fermented leguminous plant. The composition is produced by extracting a fermented leguminous plant with a polar solvent, removing the polar solvent from the extract, concentrating and drying the residue, dissolving the concentrated and dried extract in a polar solvent, diluting with water, separating an insoluble substance and emulsifying the insoluble substance. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
