<P>PROBLEM TO BE SOLVED: To provide long-life vinegared rice having better keeping quality and causing no change in its taste. <P>SOLUTION: The subject method for producing the long-life vinegared rice comprises the following process: washing polished rice with water; adding an appropriate amount of water to the washed polished rice to soak the rice in the water; and adding vinegar and glucono-delta-lactone to the mixture; cooking the rice followed by admixing seasoning-adjustment materials to the cooked rice; and sterilizing the rice at 105-110°C. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
