<P>PROBLEM TO BE SOLVED: To provide a pretreatment method for pasta or noodles reducing the time for completely boiling pasta or noodles. <P>SOLUTION: The pretreatment method of pasta or noodles comprises the following processes: a soaking process of soaking dry pasta or noodles into soaking liquid having constant salinity in a soaking bag body; a sealing process of sealing up the soaking bag body through reducing the pressure in the soaking bag body where the pasta or the noodles are soaked in the soaking process; and an absorption process of making the pasta or the noodles absorb the soaking liquid while leaving the pasta or the noodles in the soaking bag body sealed up in the sealing process under low-temperature condition for a regular period of time. The dry pasta or noodles are easily preprocessed through the soaking process, the sealing-up process and the absorption process in sequence. Such processes make it possible to obtain required palate feeling (softness) only through boiling-up the pasta or the noodles for extremely short boiling time (for example, 1 minute), and enable short-time cooking of the pasta or the noodles. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
