<P>PROBLEM TO BE SOLVED: To provide fats and oils containing a new triglyceride, to provide a method for producing the same, and to provide a microorganism used for producing the same. <P>SOLUTION: In this method for producing the fats and oils so composed that a ratio of the triglyceride formed by combining three hydroxy groups of a glycerol with highly unsaturated fatty acids of the same kind is 20 wt% or more based on an total amount of triglycerides, the microorganism capable of producing the fats and oils is cultured and the fats and oils are collected, when desired.
