<P>PROBLEM TO BE SOLVED: To obtain protein drink such as soymilk stable without producing coagulation of proteins and excellent in flavor without producing metal smell in spite of being enriched with trace heavy metals such as iron together with alkaline-earth metals such as calcium. <P>SOLUTION: The flavorous mineral-enriched protein drink having concentration of heavy metal ions solubilized therein of ≤1.5 mg/100 g is obtained by containing soymilk or a protein solution of soybean protein, soluble alkaline-earth metal salts such as calcium lactate and calcium chloride, slightly soluble heavy metal salts such as ferric pyrophosphate and chelating agents such as sodium citrate, and specifying the range of the chelating agents. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
