A cooked-extruded grains of rice, reconstitute in the cold, comprise: (a) rice flour having a degree of gelatinization of 50-95 % (preferably 75-85 %); (b) water; (c) fat; and (d) polypropylene glycol alginate. An Independent claim is included for the production of reconstitute rice grains, by: (i) cooking a mixture of the above components (a) - (d) in a cooker-extruder at 70-150 degrees C, such that the starch is partially gelatinized; and (ii) extruding the mixture in the form of rice grains. |
