<P>PROBLEM TO BE SOLVED: To discover an inhibitor for inhibiting toxicity of acrylamide, by elucidating an expression mechanism of the toxicity, and to utilize the inhibitor for a food which forms the acrylamide. <P>SOLUTION: This inhibitor is discovered based on observations as follows: a survival ratio of Paramecium bursaria is decreased in accordance with increase in a concentration of the acrylamide, when the acrylamide is added to a culture solution containing the Paramecium bursaria; an amount of active oxygen in the Paramecium bursaria which survives after the toxicity test is, on the other hand, increased in accordance of the increase in the concentration of the acrylamide; and a survival ratio of the symbiotic algae included in the Paramecium bursaria is increased, when xanthine is added to a culture solution containing the Paramecium bursaria including the symbiotic algae as an inhibitor for inhibiting formation of the active oxygen based on a presumption that the toxicity of the acrylamide increases the amount of the active oxygen inside a body of the Paramecium bursaria.
