<P>PROBLEM TO BE SOLVED: To provide a method for producing retort cooked rice, by which homogeneous retort cooked rice can be obtained through a simple process without causing any deformation on rice grains. <P>SOLUTION: The method comprises the following process: washing raw material rice with water; soaking the washed rice in water followed by steaming the soaked rice at ≥95°C; thereafter soaking the steamed rice in water so as to regulate the weight of the soaked/steamed rice to be 1.7-2.0 times that of the raw material rice; charging the rice in a container together with water and seasonings; hermetically sealing the container; and pressurizing/heating the hermetically sealed rice. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
