FIELD: wine industry, in particular, methods for distinguishing between natural and false white wines. ^ SUBSTANCE: method involves preparing sample by distilling wine for producing of distillate; determining stability of double-sided film in distillate by means of Redinber instrument and oxidizability of distillate with cobalt chloride and nitrate of uranyl; judging naturalness by stability of double-sided film, corresponding to 15.0-18.0, sand oxidizability making 4.0-5.5 s. Method is carried out without necessity of large amounts of reactants. ^ EFFECT: increased efficiency in evaluation of white wine naturalness, reduced labor intensity and time spent for determining quality of wine, and provision for reliable evaluation results. ^ 1 tbl, 44 ex |
