A breakdown kayak 10 has a number of hollow-form sections 12, 14, 16 that can be coupled together in a detachable manner. The sections 12, 14, 16 are made from a plastic material, such as polyethylene, and are formed by rotational moulding or blow moulding processes. Each section 12, 14, 16 has a deck 26, 32, 46, a hull 29, 42, 47 and at least one transversely extending bulkhead 28, 36, 38, 48, all of which are integrally moulded and have a wall thickness of between 3 and 6 mm. Each bulkhead 28, 36, 38, 48 has an integrally moulded wedge-like tongue or groove of dovetail section to form demountable joints 20, 22 between sections. Removable metal straps 66 may be used to hold each joint 20, 22 together on each side of the respective deck and on each side of the respective hull. The kayak 10 may be a sit-in or sit-on kayak and may have varying numbers of sections to accommodate different numbers of paddlers.
