PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert easily adjusting overrun of frozen dessert. SOLUTION: This apparatus SM for producing frozen dessert has a cooling cylinder 8 producing frozen dessert by cooling while stirring a mixture, a cooling apparatus R cooling the cooling cylinder, a beater 10 stirring the cooling cylinder and a microcomputer controlling the drive of the cooling apparatus and the beater. The microcomputer drives the beater 10 while driving the compressor 18 of the cooling apparatus, delayingly stops the beater after stopping the compressor and has an overrun adjusting switch adjusting overrun of frozen dessert produced in the cooling cylinder through adjusting the delay time. The microcomputer decreases overrun of frozen dessert by shortening the delay time and increases overrun by extending delay time based on the operation of the overrun adjusting switch.
