Process to condition molten sugar mass in a steam out chamber in which the mass molten forms part of the gaseous phase

In a process to treat a boiled sugar mass, the ingredients are held in a steam out chamber (17) with a base drain (21) for the molten mass and an upper vent (26). After introduction of the pre-heated molten mass to the chamber, the molten mass forms part of the gaseous phase whose temperature remains above the condensation temperature. During its residence in the steam out chamber, the medium also takes up water vapour. The molten mass is introduced to the chamber via a number if inlets. Also claimed is a commensurate assembly.
