PROBLEM TO BE SOLVED: To provide a method for prolonging the action of an enzyme by enclosing the enzyme with a crosslinked compound having a net structure formed by crosslinking action to protect the enzyme with the crosslinked compound, suppress the decomposition of the enzyme in a highly acidic environment, impart the enzyme with stability, improve and stabilize the activity, increase the activity and residence time of the enzyme in the digestive tracts of a human body and keep the health effect. SOLUTION: The activity of an enzyme can be prolonged by taking advantage of the crosslinkage of an organic substance by the E-beam bombardment reaction of an extracted natural vegetable enzyme, an organic acid and a polysaccharide.
