<P>PROBLEM TO BE SOLVED: To provide a method for producing noodles by which natural springiness with good firmness is given to noodles through an extremely simple way. <P>SOLUTION: The method for producing noodles comprises the following process: adding sodium trimethaphosphate and alkaline chemicals to noodle raw material; kneading the mixture to prepare noodle dough having pH ≥6.4 followed by making noodles; and steaming the noodles. The added amount of the trimethaphosphate is 0.02-0.5 wt.%, more preferably 0.1-0.4 wt.% based on the noodle raw material. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
