<P>PROBLEM TO BE SOLVED: To provide a method for producing nutrition-added colored rice to which additional nutrition is added and which is colored so as to visually stimulate eater's appetite, by which additional nutritious components from a natural raw material such as highly safe medicinal plants and new palate feeling are provided. <P>SOLUTION: The method for producing nutrition-added colored rice comprises the following process: coating the whole of the surface layer of wash-free rice or polished rice with embryo with a prescribed coating agent, wherein the coating agent adopts water solution consisting mainly of medicinal plants, and water used for the water solution is regulated in a ratio of 1-5% based on the rice; spray-coating the rice with the coating agent in a weight ratio of 0.1-1.0% based on the rice; and drying the coated rice so that moisture rise is regulated so as to fall within a range of 0.5% based on the moisture content of the wash-free rice or the polished rice with embryo before processed and the rice is processed so as to have water content of ≤16.0%. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
