PROBLEM TO BE SOLVED: To propose a method for stably producing a high-molecular weight poly-γ-PGA (polyglutamic acid) by suppressing the production of aγ-PGA-degrading enzyme group produced by Bacillus natto without depending on gene manipulation by using Bacillus natto which is extremely unstable, because the accumulated amount ofγ-PGA in a culture medium is not constant. SOLUTION: The method for stably producing the poly-γ-glutamic acid having a high molecular weight (of≥3,000,000) comprises suppressing production of the poly-γ-glutamic acid degrading enzyme group by giving any external stress of starvation and re-dosage of nutrient, change of temperature, existence of oxygen feed and pH change singly or in combination to Bacillus natto supplied for production of fermented soybean.
