<P>PROBLEM TO BE SOLVED: To obtain a hydrated β-maltose crystal-containing powder having excellent solubility in an aqueous medium and easily handleable, to provide a method for producing the powder by using a spraying method, and to provide use of the powder. <P>SOLUTION: The hydrated β-maltose crystal-containing powder is obtained by forming a maltose-containing solution into massecuite, spraying the massecuite to form powder, keeping the powder in a comparatively low humidity and high temperature atmosphere, and further keeping it in a high humidity and low temperature atmosphere to make α-anomer of ≥7% but <14% in the maltose as an maltose isomer, so that the obtained hydrated β-maltose crystal-containing powder contains, in terms of anhydride, ≥86% but <93% maltose and ≥2% glucose and has ≥62% but <72% crystallinity. The powder has excellent solubility in the aqueous medium and good fluidity and is easily handleable and therefore applicable to compositions of various kinds such as foods, drinks, cosmetics and medicaments. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
