A method of obtaining protein isolates of sunflower cake includes grinding the cake, extracting the proteins while a water duty is of 1:9, separating the solid particles of the cake from the protein extract by means of centrifugation, isoelectric sedimentation of proteins adding a hydrochloric acid solution up to a pH value of 4.0-4.4 and the further separation of the protein paste by centrifugation and drying thereof. Extraction of the proteins from the cake is carried out at the presence of trypsin in a sodium chloride solution in a phosphate buffer of a pH value of 7.0-8.0 in the course of 30-60 minutes at an enzyme:cake ratio of (0.25-1.0): 100.
