The protein food product (1) is made from ground raw meat, extruded to form a core with a cross-section of at least 20 sq mm, encased in a coating (3) of a jellified hydrocolloid material such as an alginate, designed to prevent agglomeration of the products in bulk. The core contains at least 10 per cent fat, while the casing is less than 0.5 mm thick and is air permeable. The products are made by a machine with a container for the ground raw meat and an extruder with its head made to produce parallel cores of meat without close contact, a cutter to chop them into pieces, and a hydrocolloid coating unit with sodium alginate and calcium salt solution sprays. |
