PROBLEM TO BE SOLVED: To obtain new chocolate flake confectionery of carbonic acid rice cracker base, having completely new palate feeling and flavor which are not obtained by conventional chocolate flake confectionery through using the edge of carbonic acid rice cracker which is disposed of as waste. SOLUTION: The chocolate flake confectionery of carbonic acid rice cracker base is obtained by coating with chocolate edge parts produced when baking using an iron plate mold and a covering lid carbonic acid rice cracker dough, obtained by mixing salt and a leavening agent with 55-64 wt.% of flour obtained by mixing wheat flour with starch at the weight ratio of (33-38) to (22-29) and 35-44 wt.% of sugar and dispersing the mixture in clear water, and bringing the product to an indeterminate form mass-like body.
