PROBLEM TO BE SOLVED: To provide a method for producing a 6-deoxy-hex-2-ulose such as 6-deoxy-L-sorbose or -L-fucrose. SOLUTION: As shown in the scheme, an optically active aldehyde compound (1) is reacted with a hydroxyacetone (2) in the presence of an optically active cyclic amino acid (3) to obtain an optically active dihydroxycarbonyl compound (4). The compound (4) can be converted into the 6-deoxy-hex-2-ulose (7) such as 6-deoxy-L-sorbose or -L-fucrose. Thus, it is possible to stereoselectively obtain the optically active compound (4) with a desired configuration which is useful as a precursor for the 6-deoxy-hex-2-ulose.
