PROBLEM TO BE SOLVED: To provide a new Hypsizigus marmoreus (Peck) Bigelow strain having a high free glutamic acid content, and to provide a method for culturing the new Hypsizigus marmoreus (Peck) Bigelow strain, and to provide a method for cultivating the carpophore of the new Hypsizigus marmoreus (Peck) Bigelow strain. SOLUTION: The new Hypsizigus marmoreus (Peck) Bigelow strain was found by hybridizing a wild strain having a high glutamic acid content with a cultivated species exhibiting a high yield, measuring a free amino acid content in the carpophores to select a strain having a higher glutamic acid content by≥1,500 mg/100g than that of an ordinary strain, repeatedly cultivating the selected strain under various environments, and then confirming (fixing) that the form, yield and free glutamic acid content of the selected strain were stable.
