<p><P>PROBLEM TO BE SOLVED: To provide a method for producing pickles intended for performing pickle production which conventionally requires a long period and much labor for pickling, in a shorter period with less labor. <P>SOLUTION: This method for producing pickles comprises treating a pickle raw material with a pickle liquid containing a liquid product obtained by treating sake lees with enzyme (amylase, protease, cellulase, xylanase, pectinase or the like). <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
