PROBLEM TO BE SOLVED: To provide a method for producing a doughnut by which the soft doughnut having puffy texture peculiar to a yeast doughnut can be stably produced by a simple method without using a step of yeast fermentation requiring skill. SOLUTION: The method for producing the doughnut without using the yeast comprises preparing a dough by using a raw material for the dough, obtained by formulating≥10 mass% protein derived from wheat and a swelling agent with the raw material for the dough, maturing the resultant dough and deep-frying the matured dough.
