<P>PROBLEM TO BE SOLVED: To provide a method for producing a tempeh food in which defatted soybean and bean-curd refuse, namely almost all of by-products derived from soybean are recycled. <P>SOLUTION: The method for producing the tempeh food comprises recycling by-products derived from soybean and using one or more kinds of raw materials selected from raw soybean 101, defatted soybean 201 and bean-curd refuse. In the method for producing the tempeh food, the row soybean 101 uses hulled and roasted soybean 102 obtained by roasting soybean and hulling and winnowing the treated soybean to remove embryo bud/hull 103 as the raw material and the embryo bud/hull 103 is added to the raw material other than the hulled and roasted soybean 102. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
