The invention relates to a method for the measurement and on-line characterisation of a biomass in a lactic acid bacteria fermentation process, comprising: a measurement of the capacitance C of the medium, for a plurality of frequencies; a measurement of the optical density of said medium; and the real-time processing of the capacitance and optical density signals in order to determine at least one of the following three variables, namely a biomass concentration variable X, a lactic acid bacteria size variable f and a variable that is representative of the physiological state ? of the lactic bacteria.
