PROBLEM TO BE SOLVED: To provide a method for producing sprout vegetables highly containing polyphenol compared to sprout vegetables produced by a conventional well-known method while maintaining the quality of the vegetables. SOLUTION: This method for producing the sprout vegetables highly containing polyphenol comprises producing under optical illumination of optical power of 20μmol/(m<SP>2</SP>s) to 100μmol/(m<SP>2</SP>s) and in the presence of a sufficient quality of nutritious liquid necessary for growth of seeds. Photoperiod time is 15 h-24 h and the nutritious liquid contains phenyl group-containing amino acid.
