<P>PROBLEM TO BE SOLVED: To provide water-soluble ceramide-formulated food and drink obtained by pulverizing ceramide regardless of purity thereof to be easily soluble in water, and formulating food and drink with the water-soluble ceramide. <P>SOLUTION: The water-soluble ceramide-formulated food and drink is obtained by combining the ceramide and a glucan having an inner-branching cyclic structural part and an outer-branching structural part, and having a degree of polymerization of 50-5,000: wherein the inner-branching cyclic structural part comprises a cyclic part structure composed of α-1,4-glucoside linkages and α-1,6-glucoside linkages, and the outer-branching structural part comprises non-cyclic structural part combined with the inner-branching cyclic part so as to improve solubility of the ceramide to be formulated. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
